Crown Heights Locals React To "Pro Cro" from Gregory Stefano on Vimeo.

It was recently reported that real estate brokers and developers were calling part of Crown Heights “Pro-Cro,” in an attempt to lure new residents who prefer the supposedly more desirable Prospect Heights. It’s generally agreed that the eastern border of Prospect Heights is Washington Avenue, but as newcomers find themselves increasingly priced out, realtors have been bringing the neighborhood to them. So we stopped by Pro-Cro recently with filmmaker Gregory Stefano to find out how local residents feel about the ‘hood’s hip new name.

Post Blizzard!

This photo was taken from my sleeping loft, looking out at our outdoor space. Might not be the easiest to see, but there is a good foot of snow! Yaaaaaay! More on the way today.

I woke up early this morning after having a nightmare about putrid, furry poisonous beetles living in the corners of my imaginary country home, bought some of the Rodarte for Target line, and I'm planning on spending the rest of my morning bundled up in bed, sipping Stumptown with vanilla Silk, knitting a hat for my special one, popping the cocoa rum balls my friend gave me on Friday, and reading Sedaris' When You Are Engulfed in Flames.

A Rough Guide to the Spicy Garlic Soy Beans

Mamichan requested the recipe I used to make my Spicy Garlic Soy (Sauce) Beans, so here we go! I really was just throwing things together, so I can't give super-accurate measurements, but I'll give you at least a rough idea....

Start with about 1/2 pound of string beans and clean them by snapping off the ends and rinsing them in cold water. Quickly blanch the lot in boiling water for about a minute and drain. Carefully pack the string beans in a clean and dry pint canning jar along with the smashed chunks of 4-6 garlic cloves and set to the side.

In a separate bowl, throw together:
-half a cup of apple cider vinegar
-2-3 tablespoons dark soy sauce
-a teaspoon of celery salt
-a teaspoon of crushed cayenne peppers
-a teaspoon of black pepper
-1 tablespoon salt

Mix together vigorously and pour over the string beans. If the mixture does not fill the jar to the top, covering the beans, splash in a little more apple cider vinegar.

Screw jar lid on tightly, and place in the refridgerator for a week or more.

*Note: I let my string beans sit in the brine for a week and a half before opening, and they're perfectly pickled.

These would be delicious with a dark stout and a plate of salty salami, sharp cheddar and smoked oysters!

Kitchen Productivity

I tested my Spicy Garlic Soy beans tonight, and while I don't mean to toot my own horn:
THEY
ARE
RAD.

Also, I made my first beef stew over the weekend while I was wishing for fall to hurry up and get here.

Canned: Spicy Soy Garlic Beans

I gave pickling (of a sort) a try!

Blanched string beans and packed them in a can of apple cider vinegar, dark soy sauce, smashed garlic cloves, salt, celery salt and red pepper flakes.
We'll see how they turn out!

Cooked: Garlic Bread Soup

Using the recipe for Sopa de Ajo from Mario Batali's Spain: a culinary road trip as a base, I made this delicious, thick and spicy Garlic Bread Soup tonight, adding a splash of vinegar, tomato paste, cracked black pepper, cilantro, and more olive oil and paprika. I topped each bowl with fresh baby spinach leaves, slices of ripe tomato, sea salt and cracked pepper.

My first attempt at cold pressed coffee...I'll let you know home it comes out in another 2-3 days. :)
